Recipe Highlights
Aviyal is one of the important side dish for rice  in south India. It's prepared with mixed vegetables ,coconut,curd. Aviyal is also good to eat with Adai for breakfast or dinner.
Ingredients Cooking Time :  40 Mins
Carrot -4
Brinjal-4
Beans-15 to 20
Green plantain-2
Potato-2
Turmeric powder-1/4 teaspoon
Hing-1/4 teaspoon
Salt- to taste
curd-1 1\2  teaspoon
Water – 2 cups
Salt - to taste
To Grind
Green chilies-4 to 5
Coconut- 1/2 cup
Cumin seed -1 teaspoon
Garlic-2 small pieces

To Temper
Coconut oil -2 teaspoon
Mustard and Urad dal – 1 tablespoon
Curry leaves – 5 to 7

Method
Step :1
Wash all the vegetables and Cut them lengthwise.

Step 2:
Heat the pan with water and add all the vegetables.
Add turmeric and hing in it and cover it with lid and let them cook for 15 minutes in a medium heat.

Add one teaspoon of coconut oil in the vegetables while cooking(after 10 minutes).

Step 4:

Grind the  ingredients given above in the column”To Grind”(do not add water while grinding).

After 15 minutes check  all the vegetables  whether they cooked well or not by pressing a piece of carrot.If the carrot is not cooked means let them cook for another 5 to 10 minutes.

Step 5:

Add curd and mix it well with the cooked vegetables for 2 minutes in a low flame.Add salt to taste.

Step 6:

Temper the ingredients given above in the column “To Temper” and mix it with aviyal.

Aviyal is now ready to taste with Sambar rice.
