Mixed vegetable Kurma is well going with Idiyappam and chappathi.It is more easy to prepare.It made with vegetables and coconut gravy.This is one of the most familiar side dish across south india for chappathi/Idiyappam.
Ingredients
- Carrot- 1 (small)
- Beans -4 to 5
- Green peas- 1/2 cup
- Cauliflower- 1 or 2 floret
- Cabbage- a small piece
- Potato - 2 (Medium size)
- Tomato – 2 (Medium size)
- Ginger - 1 inch piece
- Garlic - 4 to 5 cloves
- Green chili- 3 (If small size chili means add one more)
- Coriander powder- 1 tsp
- Chili powder - 1 tsp
- Turmeric powder - a pinch
- Salt (as per taste)
To Grind
- Scrubbed Coconut – 1 tbsp
- Fennel seeds – 1/2 tsp
To Temper
- Oil- 1 tbsp
- Fennel seeds- 1/2 tsp
- Clove -2
- Cinnamon stick-small stick
Preparation Method
1.Chop all the vegetables into small pieces as like shown in the figure.2.Grind the things mentioned below “To Grind”.Then grind green chilies,ginger,garlic like a paste separately.
3.Heat 2 tsp of oil in a pan.Add Fennel seeds,clove,cinnamon stick one by one.Then add chopped onions,Saute it well till it changes to transparent color.
4.Then add the ground paste(green chili,garlic and ginger) to the above.Sauté it well till the raw smell goes out.
5.Then add the chopped tomatoes and sauté it well.
6.Then add all the chopped vegetables one by one.Saute it.
7.Add chili powder,Coriander powder,Turmeric powder,salt one by one.saute it for 2 min.Then add 2 cups of water.
8.Close it with the lid.Let it allow to boil till all the vegetables are well cooked.
9.At last add the ground paste(Scrubbed coconut,fennel seeds).Allow to boil till the gravy thickens.
10.Now Mixed vegetable kuruma is ready to serve.It is well going with Idiyappam and chappathi.
