Egg Kothu Parotta is a one of the popular street food in Tamil Nadu. Egg Kothu parotta is cooked with plain parotta ,eggs and spicy ingredients. It is easy to make.
Ingredients
Frozen Plain parotta – 2 nos.
Egg – 2
Onion – 1
Tomato –1
Green chili – 3 Curry leaves – 1 sprig Ginger garlic paste – 1 teaspoon Turmeric powder – 1/4 teaspoon Chili powder – 3/4 teaspoon Black pepper powder – 1/2 teaspoon Salt – to taste. Coriander leaves.
Method
Toast the parotta in a pan and cool it for some minutes and cut into small pieces. Chop the
onion, tomato and green chilies
Heat the oil in a pan and add onions and sauté it with little salt. When it comes to a transparent add ginger garlic paste and sauté it till the raw smell goes off.
Now add curry leaves, green chili and turmeric powder fry it for few seconds then add tomatoes. Fry it till the tomatoes cook well . Add chili powder and mix it well.
Now break the eggs and scramble it. Add the pepper powder and mix it well.
Now add the parotta and mix it in a medium flame. Garnish it with coriander leaves.
Egg Kothu Parotta is now ready to serve.
