EGGLESS SOOJI / RAVA CAKE USING WHEAT FLOUR

Recipe Highlights
Sooji Cake I tried this cake using wheat flour. You can also try this cake using all purpose flour.
Ingredients Cooking Time : 45 Mins
Roasted Sooji / Rava – 1/2 cup
Milk – 1 1/2 cup
Wheat flour – 1 cup
Brown sugar or granulated sugar – 3/4 cup
Baking powder – 1 teaspoon
Baking soda – 1/ 2 teaspoon
Salt – a pinch
Vanilla essence – 1 teaspoon
Oil – 1/4 cup
Cashew nuts – 1/4 cup
Dry cherries – 1/4 cup

Method
Step :1
Take the roasted sooji in a bowl and soak it with a cup of  milk for 10 minutes.

Step 2:

In another bowl sift the wheat flour, baking powder, baking soda,salt and mix it well.

Step 3:

Add the brown sugar into it and mix it well. Now add the soaked sooji  in the wheat flour and mix it gently.If  it is hard to mix then add the remaining half a cup of milk.

Step 4:

Add vanilla essence and mix it . Finally add the dry cherries,cashew nuts and oil and mix it gently.

Step 5:
Grease the pan with oil or butter and pour the batter in to it.(You will pour the batter half way up the pan)

Step 6:
Preheat the oven to 350C / 180 F and bake it for 30 minutes or until the inserted toothpick comes out clear.Cool it down for  few minutes and cut the cake.

Sooji / Rava Cake is now ready to serve.
