VEGETABLE BRIYANI
Vegetable Briyani is one of our family's favorite dish. In this method, we are able to prepare tasty Briyani within 20 min by using pressure cooker. It is well going with Onion raitha/Tomato jam/Potato chips.
Ingredients
- Briyani Rice/ Rice – 2 cups
- Water- 4 cups
- Carrot- 1 (small)
- Beans -4 to 5
- Green peas- 1/2 cup
- Cauliflower- 1 or 2 floret
- Cabbage- a small piece
- Potato - 2 (Medium size)
- Tomato - 1 (Medium size)
- Ginger - 1 inch piece
- Garlic - 4 to 5 cloves
- Green chilli- 3 (If small size chilli means add one more)
- Corainder powder- 1 tsp
- Chilli powder - 1 tsp
- Turmeric powder - a pinch
- Biriyani masala - 1/2 tsp
- Corainder and mint leaves – Handful
- Salt (as per taste)
To Temper
- Bay leaf - 2
- Clove -2
- Cinnamon stick-small stick
Method of Preparation
1.Cut all the vegetables in length wise2.Then grind the ginger,garlic and green chilli like a paste, Keep it aside.

3.First add some ghee in the pan, saute the things which is mentioned below to temper.
4. Fry the Onion till it comes to transparent.
5. Add the ground paste , Saute it for few seconds till the Raw smell goes out.
6.Add the chopped tomato, saute it for few seconds.
7.Add chilli powder , coriander powder , turmeric powder , briyani masala (Avail readymade in shop) one by one.
8. Saute it for few seconds.
9. Transfer the contents from the kadai to cooker, add rice.
10. Add 4 cup of water into the pressure cooker, check the salt through tasting the water. Close the lid and switch on the flame.
11.Check the steam comes out, Put the weight and wait for 1 whistle. Simmer the flame for 5 mins.
12. Taste and delicious Briyani is ready to serve.
