CARROT POTATO SOUP

Recipe Highlights
Healthy carrot potato soup.
Ingredients Cooking Time : 20 Mins
Carrot - 1
Potato – 2 small size
Onion – 1/4
Garlic cloves - 2
Bay leaf - 2
Vegetable stock – 2 to 3 cups
Salt - to taste
Oil or Butter – 1 tablespoon
Milk – 1/2 cup
Pepper powder – 1/2 to 1 teaspoon
Chesse – for garnish

Method
Step :1
Chop carrot and potato roughly.Put them in a pressure cooker and add vegetable stock,bay leaf and salt.

Step 2:

Allow them to cook it for 3 to 4 whistles.Remove the bay leaf and make a puree of them.
Heat butter in a pan and add finely chopped garlic immediately and saute it for a minute.
Then add finely chopped onion and saute it for 2 to 3 minutes in a medium flame.
Add the puree of carrot and potato.

Step 3:

Loosen the soup by adding milk  ( and vegetable stock if needed)to it and allow it boil .Finally add pepper powder.
Add very little cheese on the top of the soup for garnishing.

Carrot Potato soup is now ready to serve.
