MANGO CARROT PICKLE

Instant Mango Ginger Carrot Pickle.Best side for curd rice.
Ingredients Cooking Time : 20 Mins
Mango - 1
Carrot - 1
Ginger – 1(medium size piece)(optional)
Sesame oil – 2 to 3 teaspoon
Turmeric powder – 1/4 teaspoon
Hing – a pinch
Salt - to taste
Sugar – 1/2 teaspoon
Oil – 2 teaspoon
Mustard and Urad dal – 1 teaspoon

Method
Step :1
Cut the mango into small pieces.Shred the carrot and ginger.

Step 2:

Heat oil in a pan.Add mustard and urad dal.Then add mango,carrot and ginger together.Mix it well.Add Turmeric powder,hing,chilli powder and salt.
Keep it in a medium flame and let them cook for 5 to 10 minutes.Finally  add sesame oil ,sugar and mix it well,cook it for a minute.
Switch off the flame and transfer it into a serving bowl.
Store it in a airtight container and keep it in a refrigerator for 10 days.
