WHITE PUMPKIN SAMBAR

Recipe Highlights
White pumpkin sambar is healthy sambar that well goes with rice.
Ingredients Cooking Time : 40 Mins
Tamarind -small lemon size
    Onion -1
      Tomato-1
        Turmeric powder-1/2 teaspoon
          Hing-1/4 teaspoon
            Chilli powder-1 1/2 teaspoon
              Oil-2 teaspoon
                Salt-to taste
                Water –as needed










                White Pumpkin – 250 gm 
                Toordal - 1 cup
                To Temper
                Oil - 1 teaspoon
                Mustard and urad dal - 1 teaspoon
                  To Grind
                  Coconut-1/2 cup
                    Cumin seeds-1 teaspoon
                      Small onion-3







                      Method
                      Step :1
                      Peel the skin from the white pumpkin and chop them big pieces
                      Take a cup of toor dal, add water and cook it in a pressure cooker for 3  whistles.In the top of the toordal  vessel, put the  white pumpkin in another vessel with a  little water and cook along with it.
                      once the pressure from the pressure cooker completely released open the lid take the vessels separately.

                      Step 2:

                      Soak tamarind in a hot water for 10 min.
                      Prepare tamarind juice and add turmeric,hing,tomato,chilli powder and salt.

                      Step 3:

                      Heat oil in a pan, add onion and saute it for 2 to 3 minutes.Add the tamarind mixture.Let them boil for 20 min.or till the raw smell of tamarind goes out. Now add the cooked pumpkin and boil it for 3 minutes.

                      Grind the ingredients given above in the column “To Grind”.

                      Step 4:

                      Then add the cooked toordal and let them boil for 5 minutes.Then add the grinded coconut paste into it and boil it 5 minutes.
                      Heat a teaspoon of oil in a pan and add mustard seeds when it starts to crackle add urad dal  and fry it till become golden brown color and  mix it with sambar.
                      Finally add the chopped coriander leaves and switch off the flame.
