MINESTRONE SOUP

Recipe Highlights
Healthy vegetable soup with pasta and chickpeas.You can also add Rajma,pinto beans.
Ingredients Cooking Time : 30 Mins
Butter – 1 tablespoon
Bayleaf - 1
Garlic – 2
Onion - 1
Tomato - 1
Vegetables – 1 cup(I used carrots,beans and capsicum)
Salt - to taste
Vegetable stock – 4 cups
Pasta – 1/2 cup
Kabuli channa/Chick peas – 1/2 cup
Pepper powder – 1/2 to 1 teaspoon
Chilli flakes – 1/2 teaspoon(Optional)

Method
Step :1
Soak the kabuli channa overnight and cook it in a pressure cooker for 3 whistles.
Heat butter in the pressure cooker.Then add bay leaf and finely chopped garlic and saute it for  a minute.
Then add chopped onion and fry it for 2 minutes.
Then add chopped tomatoes and vegetables just fry it for a minute.

Step 2:

Then add vegetable stock,italian seasoning,pasta and kabuli channa and mix it well.Cook it for 1 whistle and switch off the flame.
When the steam from the pressure cooker completely released open the lid and cook it in a low flame for 2 minutes.
Finally add some pepper powder and mix it well.
Remove the bayleaf from the soup
Serve hot.

Minestrone Soup is now ready to serve.
